Directions:
Position a rack in the middle of the oven and preheat to 350 degrees F.
Combine the champagne vinegar, shallots, salt, oil, pepper, and tarragon in a glass jar and shake vigorously to blend. Set aside at room temperature to allow the flavors to marry.
Place each color of beet in a separate small baking dish. Divide the thyme, onion, white wine vinegar, and oil between each pan. Toss to coat, then season with salt and pepper.
